Chef Kyle Knies
Chef Kyle Knies first learned to cook with a hot plate in a studio apartment in Paris, France. He was just 18 years old, and he spent most days at the produce markets sampling fresh fruits and vegetables. Soon he discovered the Chinese, Indian, Japanese and Moroccan markets in multicultural Paris, and he started collecting spices and seasonings from around the world. With a little bit of trial and error, he felt like a mad scientist who had made more than a few memorable and satisfying inventions. Originally having gone to Paris hoping to become an artist, he decided he would rather eat his way through Europe. Landing on cooking as his passion, he began to fuse the two and felt like it was time to share it with the world.
Since returning to America, he has worked in restaurant kitchens in New York City and San Francisco, receiving training along the way at the Natural Gourmet Institute. Now he calls San Francisco his home and he is constantly blown away by the diversity of the food available in the city. In addition to the wealth of nearby farms and orchards that provide fresh produce all year long, there are thriving communities of Latinos, Asians and just about every culture in America with their food traditions and markets. It is a thrilling place to be a chef, and Kyle cannot wait to learn about what foods you love, and share with you his passion for satisfying and delicious food.
In addition to cooking, Kyle is passionate about farming and gardening and fresh herbs and vegetables from his garden may find their way onto your plate! He is a whitewater boatman, and he has led a river rafting trip down the Colorado River through the Grand Canyon. He lives with his wife, Ashley and their rescued dog, the inimitable Becky Mae Dominguez. He is a committed activist, and he is working to end violent and destructive animal farming practices on factory farms. Just by eating one of his scrumptious meals, you will save the lives of farmed animals. You will also feel healthy, vibrant and very alive!
Sous chef Ashley
Ashley Knies is the sous chef, nutritional consultant and resident taste tester of From the Garden. She received her training to practice Health Counseling at the Institute for Integrative Nutrition, where she studied under prominent health figures like Andrew Weil, Deepak Chopra, David Wolfe, Neil Barnard and Joel Fuhrman.
Her love of health and wellness emerged in her early childhood when she would spend Saturday mornings exercising to Mary Hart's Fit and Firm workout video and snacking on vegetable crudités. Ashley has always known that health and happiness are one and the same. What makes her happiest is preparing delicious plant-based foods full of fresh herbs and spices (her favorite foods include vegetable green curry and mango salsa), growing her own food, dancing, practicing improv, traveling, and doing her best to take care of our big beautiful planet and helping others do the same.
She looks forward to working with you and helping you integrate garden-based nutrition and wellness into your life to create a more sustainable you who is both healthy and happy!
